Italian Turkey Sausage and Vegetables is a meal in a bowl. I love crock pot meals and this is a great one. The pot is full of vegetables that you can interchange to your taste.
I love meals where I can toss everything into the slow cooker and run out the door knowing dinner will be ready when I get home. This dish is full of vegetables but the freshness of a salad really brings this meal together. I prefer spicy sausage in this dish versus mild italian sausage. Give it a chance, you won’t be disappointed!

1 block pepper jack cheese 8 oz
Tip from Me!
Try substituting the potatoes with sweet potatoes or some other root vegetable for the potatoes. If I can’t find good zucchini I will use yellow squash. Don’t be afraid to mix and match ingredients to meet your flavor profile.

1 pound sweet or hot italian turkey sausage links |
1 can diced tomatoes 28 ounces |
2 medium potatoes |
2 small zucchini |
2 red peppers |
1 medium onion |
1/2 teaspoon garlic powder |
1 teaspoon crushed red pepper flakes |
1/2 teaspoon dried oregano |
1/2 teaspoon dried basil |
1 cup shredded pepper jack cheese |
- Gather all of your ingredients and measuring tools
- Add to a crock pot and stir:
- 28 ounces diced tomatoes
- Cut 2 potatoes into 1 inch pieces
- Cut 2 zucchini into 1 inch pieces
- Cut 2 red peppers into 1 inch pieces
- 1 medium onion sliced into wedges
- 1/2 teaspoon garlic powder
- 1 teaspoon red pepper flakes
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Shred 1 cup pepper jack cheese and place in refrigerator until ready to serve.
Let's cook!
- Complete prep from prep tab above.
- Brown the turkey sausage 2 minutes per side then add them to the crock pot.
- Set the crock pot on low and cook for 4 hours or until turkey is 165°.
- Slice the turkey into pieces and stir together. Serve with cheese. Enjoy!
