Herb Crusted Potatoes is one of my favorite potatoes. It is perfect with almost any type of meat. The best part is you can season the potatoes with whatever flavors you like!
Try out some of our homemade spice blends. I first found this recipe in my Taste of Home Light and Tasty 2007 Annual Recipes Cookbook.

1 bag russet potatoes 5 ibs

1 1/2 pounds potatoes |
1 tablespoon olive oil |
1 tablespoon fresh rosemary |
1 teaspoon dried thyme |
1 teaspoon dried oregano |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Prep
- Gather all the ingredients as well as measuring tools.
- Combine seasonings in a small prep bowl:
- 1 tablespoon minced fresh rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Slice the potatoes into wedges
- Place the potatoes on a sheet pan
- Cover the potatoes with oil and spices then mix well
Let's cook!
- Complete the prep from the prep tab above.
- Preheat the oven to 425° F
- Stir the potatoes every 10 minutes
- Roast potatoes for 35 to 45 minutes until they are fork tender
