Ham and Fruit Salad with Orange Ginger Vinaigrette is best when the oranges are in season. If they are not in season then substitute mandarin oranges. This is a great way to use up leftover picknick ham.
As the seasons change try substituting different fruits such as peaches, plums, mango, pineapple, melons, etc. I like to use a variety of greens such as baby spinach, arugula, romaine, spring mixes, etc. Salads are endless fun because they lend so well to interchanging a variety of ingredients.

8 oz thick ham, diced |
1/4 red onion, sliced thin |
5 oz mixed salad greens |
4 oz block Monterey jack cheese |
2 apples |
2 oranges |
Dressing: |
1/4 cup orange juice |
2 tablespoons white vinegar |
2 tablespoons honey |
2 teaspoons fresh gingerroot, grated |
1/2 clove garlic, minced |
1/2 teaspoon salt |
1/4 teaspoon cayenne pepper |
1/4 cup olive oil |
Prep
- Gather all of your ingredients and measuring tools
- Wash lettuce and salad spin or place on a clean towel for 10 minutes.
- Dice Ham
- Thinly slice 1/4 of the red onion
- Thinly slice apples
- Peel oranges and separate them into slices
- Cut 4 oz of cheese into small cubes
- Combine in a mason jar, dressing container, or bowl
- 1/4 cup orange juice
- 2 tablespoons white vinegar
- 2 tablespoons honey
- 2 teaspoons fresh gingerroot, grated
- 1/2 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 cup olive oil

- Add lettuce to the salad bowl
- Add:
- ham
- red onion
- sliced apples
- orange slices
- cheese
- Toss to combine
- Divide into 4 bowls and top with salad dressing. Enjoy!
