Chili over Noodles was discovered by my family when my dad accidently made the chili too salty. We boiled up noodles and placed the salty chili over top and it was perfect. By adding the noodles a pot of chili will last longer and becomes a great freezer meal.
We freeze chili and other foods in 1 cup ice cube trays. I highly recommend making a large pot of chili and freezing some so you have a quick meal when there is no time to cook. Check out our article on freezing food using ice cube trays for more freezer friendly meals.

1 medium green pepper, chopped (1 cup) |
1 medium onion, chopped (1 cup) |
1 jalapeno, chopped |
1 garlic clove, minced |
1 tablespoon chili powder |
1 tablespoon ground cumin |
1 teaspoon oregano |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1.5 teaspoons olive oil |
1 can diced tomatoes, undrained 14.5 oz |
1 can red beans, rinsed and drained 15 oz |
1 can tomato sauce 8 oz |
1/2 can tomato paste 6 oz |
1/2 cup sour cream |
- Gather all of the ingredients and measuring tools
- In a medium mixing bowl add:
- 1 onion chopped
- 1 green pepper chopped
- 1 jalapeno chopped
- In a small prep bowl add:
- 1 minced garlic clove
- Measure into a small prep bowl
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
Let's cook!
- Complete the prep from the prep tab above.
- In a Dutch oven heat 1.5 teaspoons of olive oil.
- Sauté vegetables until tender.
- Add garlic for 1 minute
- Add and bring to boil:
- Seasonings
- diced tomatoes
- tomato sauce
- tomato paste
- red beans
- Reduce heat to medium low stirring occasionally for 20 minutes.
- Bring a pot of water to boil and cook 8 ounces of pasta to package directions.
- Serve chili over pasta with sour cream. Enjoy!
