Beefy Tomato Rice Skillet is a very quick fix on a busy weeknight. I find it really hard to follow recipes and this recipe is a perfect example of that. Orginally this recipe called for condensed tomato soup and I substituted crushed tomatoes for a fresher flavor.

1 - can kernel corn

1 - can crushed tomatoes

Tip from Me!
As you are cooking taste for acid. If you find this dish too acidy (sour) add some sugar 1/4 teaspoon at a time. Add a little sugar let it cook for 2 minutes then taste again. If it is still too acidic then add more sugar. Eventually you will find a good balance for your liking.
Let's prep!
1 pound ground beef |
1 cup chopped celery |
1 onion |
1 green pepper |
1 can whole kernel corn |
1 can crushed tomato |
1 cup water |
1 teaspoon Italian seasoning |
1 cup uncooked instant rice |
- Gather all of your ingredients and measuring tools
- Chop 1 medium onion and place in a prep bowl
- Thinly slice 3 celery stalks and place with the onion
- Chop 1 green pepper and place with the onion and celery
- Drain the corn
Let's cook!
- Complete the prep from the prep tab above.
- In a large skillet over medium high heat add:
- 1 pound ground beef
- celery, onion, and green pepper
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon red pepper flakes
- Cook the beef and vegetables until the beef is brown and the vegetables are tender
- Add the garlic and cook for one minute
- Add:
- corn
- crushed tomatoes
- 1 cup of water to the empty tomato can/jar then swish around and empty into the beef vegetable mixture
- 1 teaspoon Italian seasoning
- Bring to a boil and taste for seasoning. This is where you adjust salt, pepper or add sugar if it is too acidic.
- Stir in 1 cup of rice, cover and let stand for 10 minutes. Enjoy!
