Pesto Grilled Cod is a wonderful way to make fish. After we have the fish plated I like to finish it with a little freshly squeezed lemon juice. We have a gill basket that snaps shut and have found that this is essential when making fish on the grill.
Andrew and I have been grilling for years and the accessories you can buy with grills tend to be worth it especially if you grill a lot. We have vegetable trays, baskets, a fish basket, grill gloves, cast iron pans, the list goes on and on. We grill all year round.
We are cooking a lot more fish these days because we decided to go on the Mediterranean diet so look forward to more fish recipes. I am not a big fish fan so if I’ve posted it then it is a good starter fish recipe.
