Tomato Cucumber Salad and Vinaigrette is a perfect side salad to any Italian dish.

Tomato Cucumber Salad and Vinaigrette is the perfect side salad to any meal especially Italian meals. I like to buy a block of cheese and cut it into chunks then add it to this salad as an appitizer. You can experiment with several with different vinaigrette variations.

We grow a garden every year and this is a really great way to highlight our vegetables next to summer meals. I like to add other vegetables as well such as green pepper, jalapeno, or squash.

I am assuming you have salt and pepper. It is not included in pantry and spices. 

Pantry & Spices

  • olive oil
  • red wine vinegar
  • 1/2 garlic clove
  • dried basil
  • dried oregano

Grocery

  • 3 medium tomatoes
  • 1 cucumber
  • 1 jar kalamata olives
  • 4 green onions

Let's prep!

Let's cook!

  1. Complete the prep from the prep tab above.
  2. In a medium bowl add:
    • Chopped tomatoes 
    • Chopped cucumber 
    • Kalamata olives
    • Thinly sliced green onion
  3. Sprinkle with 1/4 teaspoon of salt
  4. Add dressing over the top and mix to combine. Enjoy!
