Lemon Herb Roasted Cauliflower is one of our favorite side dishes. I love roasted vegetables and we have them with almost every dinner. Lately we have really enjoyed roasted cauliflower. This dish is also great if you add radishes cut in half.

1 head of cauliflower |
4 tablespoons olive oil |
1/4 fresh flat leaf parsley |
1 tablespoon fresh rosemary |
1 tablespoon fresh thyme |
1 lemon zested |
1 lemon juiced |
1 teaspoon salt, divided |
1/2 teaspoon cracked black pepper |
1/2 teaspoon crushed red pepper flakes |
- Gather all the ingredients as well as measuring tools.
- Chop and place in a mixing bowl:
- Bite size pieces of cauliflower
- 1/2 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 2 tablespoons olive oil
- Mix well and place on a sheet pan.
- In the bowl that just had the cauliflower mix well:
- 2 tablespoons olive oil
- 1 tablespoon minced fresh thyme
- 1 tablespoon minced fresh rosemary
- 1/4 cup fresh flat leaf parsley, minced
- zest of 1 lemon
- juice of 1 lemon
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes
Let's cook!
- Complete prep from prep tab above.
- Preheat the oven to 425° F.
- Stir the cauliflower after 10 minutes.
- Continue to roast for additional 10 minutes.
- Remove cauliflower from oven.
- Give the spices a stir then use a slotted spoon to add the cauliflower to the bowl.
- Mix well & enjoy!
